Here's my second installment of my food blogs :P Today we worked with chicken!

Wednesday, October 8th, 2008:

So today I wanted to get away from the dark sauces that I used for the past two nights, and wanted to give the chicken a light seasoning. I came up with another marinade (approximate measurements):
1/2 cup Pinot Grigio (White Wine)
1 tbsp. salt
1 tbsp. black pepper seeds
1 tbsp. lime juice
A sprig of thyme and rosemary
1/2 cup milk/lemon juice/vanilla extract/sugar mixture from last night

I marinated the chicken for about an hour before putting it over a low heat in a frying pan (lightly oiled). I let each side cook to a white-beige color, draining the pan twice to get rid of excess liquid since I didn't want the chicken to be boiled.

On my grill-line cast-iron pan, I placed slices of zucchini which I seasoned with the marinara sauce and salt. I cooked these on a slightly higher heat than the chicken, and once the zucchini seemed finished, I switched the zucchini into the frying pan and placed the chicken on the grill-line cast-iron pan. I put the zucchini to a low heat just to keep it warm, and grilled the chicken until it was finished.

I took the two rectangular plates and put them in the freezer for about 5-7 minutes, then removed them and let them sit for a minute or two to warm up and moisten a little. Then I used spike (salt substitute) to garnish the plates in three lines (the moisture from freezing the plates kept it in place) and placed the chicken slices over that. Setting the rectangular plates on a larger, circular plate and surrounding it with the zucchini and voila! That was it.

I served this meal with a simple beverage of water with a little lime and sugar, which ended up being very refreshing :) I was happy with this meal, especially since I normally don't like zucchini and actually enjoyed how it came out. It was a great meal for someone who doesn't like things overly salty.
